Cooking pasta is not as difficult as some may think.  You just need to follow the directions for each type of pasta that youalla carbonara are cooking.  I used to have a specific pot for cooking my pasta until I lifted the insert from the pot too fast and spilled piping hot water all over myself.  I mean, I knew that I had to pull the strainer out slowly but I guess I don’t have the degree of patience needed to pull the pasta out slow enough to not give myself second degree burns.  So I just went back to using the tried and true ordinary pot.  Cooking pasta that way works perfectly for me and I am no longer afraid.

If you have read my Home page or Southern page then you know I can’t let you go on without a story, and cooking pasta is no exception.  Unfortunately, my husband does not know how to boil water (I mean literally) but he wanted to help with dinner one day.  So I told him that I was about to be finished with cooking the pasta for the mac and cheese and that he could drain them for me.
 
Well, I took for granted he knew what to do from that point on since I used to make the dish quite often but when he spooned the pasta onto my plate I noticed that the cheese was not sticking to the pasta.  I asked him what had he done with it and he said that he rinsed it since he had seen me do it with
pollo corazon spaghetti in the past.  I told him that the starch that was rinsed away was needed for the cheese to stick to the pasta but that we would eat it anyway.  He did his best, but after that I made sure he was right there the next time I was cooking that dish.

There is so much to learn in cooking but I look at it as an adventure that is sometimes forgiving and sometimes not, but you won’t know what you can do until you try.  I have found that cooking is not only satisfying to the palate but that it brings people together in the most interesting way.  So whether you are cooking for one or for a group, adding pasta to your menu gives you that little bit of variety to the ordinary meat and potatoes that you’ve been used to cooking.

 
 
 
 
 
 
Creamy Chicken Pasta

4 boneless skinless chicken breasts, cut into thin strips
8 ounces linguine, cooked al dente
2 tbsp olive oil
1 thinly sliced green onion
2 cups heavy whipping cream
1/4 cup chopped sun-dried tomato
salt
1/2 teaspoon dried basil
ground black pepper
1/4 teaspoon garlic powder
1/2 cup grated parmesan cheese

In a large skillet over medium heat, sauté chicken in oil until chicken is tender, about 5 to 7 minutes.  Reduce heat and add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.

So serve, pour over hot linguine and toss with Parmesan cheese.
