Mexican cooking has the flavor combination that you won't find anywhere else.

Mexican cooking has to be one of the most diverse and spiciest foods to eat. If you love peppers and flavors that explode in your mouth then Mexican cooking is the food for you. Mexican cooking has been around for centuries and because of that it has had plenty of time to perfect the tastes that we know and love.
If you have never eaten Mexican cooking you are definitely missing out on flavors you may never experience in other foods. With Mexican cooking you have choices such as cactus with meat and rice, Caldo de Res (Mexican beef soup), Tamales, Chiles Rellenos, Posole, or maybe savor a rich Tres Leches (a cake with 4 types of milk) or Sopaipillas for dessert.
If you want to have a drink you can try some hot Champurrado on a cold day or have a couple of the well known Margaritas. Many of these are definitely quite different from the taco, burrito, enchilada, and guacamole that most of us are used to. But as you can see from the samples above Mexican cooking has much more to offer and experiment with.
When it comes to Mexican cooking, I personally love to make my own guacamole and salsa instead of purchasing it from the supermarket because it is so simple to make. Making your own tortillas isn’t as difficult as you may think either. Also, if you love to entertain you will love making a variety of Ceviches. With Mexican cooking the sky is really the limit when it comes to textures, flavors, techniques, and colors.
With countless varieties of peppers to choose from you can have a little heat or burn your tongue off. Since I am sensitive to the heat that peppers bring, I try to keep things a little on the mild side. But wherever your search brings you, try something new with Mexican cooking. |

Chicken Breasts wrapped in Bacon - Pechugas con Tocino
6 medium chicken breasts
6 slices of bacon
1 teaspoon of vinegar
2 cloves of garlic
1 pinch of ground vinegar
1 cup of dry white wine
pepper
1 pinch of ground clove
Crush the garlic with the vinegar, cinnamon and clove. Wash the chicken breasts, dry them and rub them with the vinegar, spice and garlic mixture. Wrap the bacon around the chicken breasts and secure with a toothpick. Place the breasts in a casserole dish. Add wine and pepper. Bake on medium heat for 15 minutes. Turn the breasts over and cook until tender, bathing them from time to time in the sauce.
